Chicken Kiev Stuffed With Morels

1 lb. morels
1 lb. Italian Brown mushrooms
4 Tbsp butter
2 cups finely chopped onion
1 cup finely chopped celery
1 tsp salt
1/2 tsp nutmeg
1/4 tsp black pepper
1/2 cup dry white wine
2 cups whole wheat bread crumbs
3/4 cups chopped parsley
8 chicken breasts (about 1/4 lb. each)

Instructions

  1. Preheat oven to 400° F. In a large skillet, melt the butter and add the chopped morels, onion and celery. Sauté about 3-5 minutes or until soft. Add the salt, nutmeg, pepper, and wine and cook for 2-4 minutes, stirring constantly. Stir in the bread crumbs and parsley and remove from the heat. Stuff each breast with about 3/4 cup of mushroom stuffing, and place them in a shallow roasting pan. Brush the chicken breasts with melted margarine. Bake in the preheated oven at 400° F for one hour. Continue bastint once or twice while baking. Bake until the juices run clear or until a thermometer place in the breast registers 180° F. Makes 16 1/2 breast servings.
